The new However-You-Want-It-Frappuccino launches in downtown Seattle on April 19th! It’s the total reinvention of the Starbucks Frappuccino. Suddenly you can now order anything from a soy milk Frappuccino to a breve milk Frappuccino, if that’s what you want. Starbucks tested these new Frappuccinos for about two years, and now finally is launching them. The Starbucks Frappuccino is truly an incredibly iconic drink, so tinkering with this beverage IS a risky move. Starbucks boasts that 40 million customers each week cycle through Starbucks, and we know from real-world experience for many of these customers the only reason to go to Starbucks is for the Frappuccino.
I’ve had the chance to try the new Frappuccino, both as the vanilla bean version and as the coffee base, and for me I was totally happy with the new Frappuccino. I thought the flavor somehow really does taste fresher and that the consistency was better. However, I’m not the type of customer getting a daily Frappuccino, so I’m not the customer who will take one sip and be alarmed at the change in recipe.
One might ask ‘why?’ would Starbucks change the Frappuccino. There had been many complaints of no non-dairy Frappuccinos, and so I suspect Starbucks ultimately wanted to give every customer some flexibility with his or her drink. It is my understanding that when this was in the testing phase, it was sometimes called the “Fresh Frappuccino” or the “Custom Blended Frappuccino”.

This April 19th soft-launch date for downtown Seattle, as far as I know, is not the official nationwide launch date of this new Frappuccino. However, many cities have already switched over to the new version of the drink, and downtown Seattle begins serving the new version on Monday, April 19, 2010.

Allow me to back up, just in case readers are completely confused by this post. A little background: One upon a time, well over a decade ago (and closer to 15+ years ago) Starbucks created an addictive cold coffee drink with Italian Roast coffee (brewed double strength, meaning double the amount of grounds normally used for one batch, and chilled in tubs in a refrigerator), ice, sweetener, some milk, and a blender. The drink became the Frappuccino. Shortly after it gained great popularity, Starbucks discovered a way to make it easier on the stores: They sent to stores a carton of Frappuccino base in a carton, and a instant coffee powder. If the customer ordered a basic coffee Frappuccino, it was just these two components in a blender with some ice. That version of the Frappuccino –the two component version of the basic coffee Frappuccino — is the version that millions of customers grew to fall in love with. The obvious disadvantage of the two component Frappuccino is that there was no way to customize the milk options (since the milk was part of Frappuccino in the carton) nor could you do anything to adjust the coffee strength.
The new However-You-Want-It-Frappuccino is essentially a three component Frappuccino. The base has changed drastically. No longer is it one basic base in a carton that cannot be adjusted to the customer’s liking. The new version of the Frappuccino still has some sort of a instant coffee powder, but the base is drastically different and has a little sweetness to it and does not include the milk component. Now the milk component is separate in the blender, a freshly poured milk option selected by the customer. The base is still a liquid and contains some sort of emulsifiers to provide the beverage with the correct texture and consistency.
So that concludes the “background” story to the Frappuccino,albeit probably a grossly oversimplified version of the Frappuccino story. The Frappuccino was born in the stores with Italian Roast coffee, later was simplified with a two component process that became wildly popular, and now has a more flexible process with a new base and the milk option being a separate choice for the customer to decide upon.

About six months ago I wrote a blog entry about my own first experience with the new Frappuccino. I visited one of the regions where it was tested:

^ It’s odd looking back at what I wrote six months ago. I liked the Frappuccino and described as “definitely good” though worried about changing a beverage which essentially is the cornerstone of a lot of sales. I hope that most people who are unhappy with the new Frappuccino can go back to their baristas and figure out how to tweak the drink to make it taste to their liking. This is the great advantage of the drink: If you need more coffee flavor, the barista can add it. If you need more sweetener, that can be adjusted too.
I have heard from other Starbucks-related web sites that if a barista has to pump more coffee into the drink than the standard drink recipe calls for, the customer will be charged. I believe that it is forty cents for extra coffee Frappuccino syrup. Although perhaps I can understand the increased price, I think that will cause a second round of confusion and consternation at Starbucks. Customers are visually only watching a barista do something that looks like a “pump” of syrup or sauce, and in the customer’s mind, there is no extra charge for more chai or mocha in a beverage (where the recipe already calls for the sauce) thus some customers will be surprised to find another 40 cent charge to their drink. We’ll just have to see how that goes.
So my upshot: The new drink is two thumbs up! Better texture, better flavor, and a genuinely fresher taste.

I was all excited and could not wait to try it…since i am lactose intolerant and wanted the soy, and now today is freeing! 🙁
I love the new Frappuccinos. Although some stores will not be launching it today. April 19th is the day we are allowed to start selling it, but we can’t until we run out of the old base. Some stores will still have enough old base for a few more days 🙂
I think it’s….odd… that Sbux has bent over backwards for the frappucinos, created all these options…when all SO many of us ever wanted was NOT PPR or, at least, our choice of BOLD, all day, every day.
Actually, I know it’s not odd. I know it’s more $$$.

I have yet to try it, and I don’t know if they got soft launched here today. My guess would be here in AZ they probably will run out of the old base very quickly since weather is starting to get into the mid 80s.
I am excited to see if I will like it, given all the mixed reviews. I drink maybe 5 frappuccinos a year, and I like the idea that we can use non-fat milk in them. I am guessing those that ‘hate’ them are the customers that order frappuccinos on a regular basis and are not used to the new taste?
Those that tried it…did you find that you needed to add more coffee to them than what it calls for? Of course I understand this is subjective but what is the general opinion?
Here’s what I’d like to see….Frappucinos that DO NOT HAVE CORN SYRUP! Do you realize that even the “Light” version has Corn Syrup in it?! In fact, corn syrup is the #1 ingredient in BOTH the regular and light frappucinos! These drinks aren’t healthy no matter whether or not you get skim milk, soy or rice milk or the “light” version!
It doesn’t really matter what Starbucks does to make their Fraps more enticing to me. These drinks are the most unhealthy thing you can do for yourself. The so called “Light” version isn’t any better! Both the “regular” and “light” versions have CORN SYRUP as their #1 ingredient. So, regardless of whether or not you make it “healthier” by using soy, skim milk, etc., it’s all in vain. If you care about your body, avoid Fraps!
Ohhh!! I cannot wait to test it…I LOOOVE Frappuccionos…a Caramel Frappuccino was the first beverage I ever had at Starbucks and it is still today my favorite drink. AWESOME!
I am not a frappuccino drinker, but every time I read about the new However-You-Want-It frappuccinos I want one!!! Grande 5 pump frappuccino roast nonfat extra caramel drizzle no whip caramel frappuccino blended coffee. MMMMM!
Just downed a tall Dark Cherry Mocha Frappuccino and besides the painful brain freeze that ensued it was simply divine!!

I think it is a good move. It’s fresher, we can say yes to everyone and there is a lot less waste. But it’s going to take some time convincing people.
THAT is what I’m holding my breath over. I think we’re all going to want to hide in the back for a month or 3 to avoid the bile. But once it blows over, people will forget…

i haven’t gotten out to try one of these yet, but i wanted to note that the advert you use at the top of the entry reminds me *strongly* of a recentish microsoft campaign. i am such a geek 😛
now back to contemplating what kind of frappuccino i am going to try tomorrow!
As a recent returnee to a store (I last worked in a retail location in June of 2004), I don’t have years of built in bias from making Frappuccinos for the past few years. The new method makes an amazing product which, IMO, offers a much better coffee taste. The couple of comments we’ve gotten from customers have been about the Light versions. They’ve all complained about the taste profile of the new sweetener. I try to explain that the new version is all natural, but some folks are just wedded to their old habits, and I’m sure it will take a while to get them used to the new flavor.
I think it will take a couple of weeks for our partners to feel fully comfortable in their assembly habits, but I can already tell that it will be much nicer not having to mop up all the spilled mix that was sticky and went EVERYWHERE.

like CABarista mentioned, with the new frappucino recipe, high fructose corn syrup is completely taken out and on top of that the caloric content is lowered.
I really do enjoy the fresher taste and the texture of the new frap. So far, I haven’t heard any complaints from the regular frap-customers at my store.
I like the new frapps. The consistency is better, and they are much lighter and fluffier. I think they taste better than the old formula, but then again I’m no frappuccino connoisseur.
I wonder when the new nutrition info will go up on the website.

I hope with all this enthusiasm there is patience. After working and getting down the new process it STILL does take a bit longer to make. After all we changed a 3-4 step process into a 9 step process. They had to shrink the font just to be able to fit the recipe onto just one oversized card.
I’m excitedly awaiting for the arrival of the “new” Frappuccino. I hear that any Frappuccino made with soy is marvelous. Although I wonder how people will take to it considering that the Frappuccino is such an iconic drink. Should Starbucks be messing with something that’s already so grand?
Having a soy frappuccino is great because I’m not shitting myself anymore whenever I enjoy one.

Looks like a lot of people don’t drink cows milk, so this is a good move by Starbucks in my opinion.

I was allergic to the old ones. I tested, and i still am allergic to these ones… must be an ingredient in the Base.
However i can now put frappuccino roast in my banana chocolate smoothie.

I forgot to ask if we had the new supplies at my Starbucks yet since it’s been chilly, I’ll ask this afternoon
We launched these in my store on Monday and so far it has been a smooth transition. Most customers cannot tell the difference when I tell them they are drinking the new recipe. However, most make a face when they find out its whole milk as the default milk. That has been interesting. The hardcore frappuccino drinkers are unhappy…they have been trying to play around with the recipe. It really feels like making frappuccinos takes longer now, and I have only had to make a few here and there during slow times of the day so far. Once the weather warms up and its a Saturday or Sunday I feel like it might be a nightmare. And I’m a little sad that the new base has citric acid in it because every time I’ve had one to drink, I break out in hives. Stinks being allergic to them, no more frappuccinos for me. 🙁
I was not aware that Starbucks was changing the formula for their fraps. I thought my first order was a mistake but after my third order decided to go to the website and discovered the change. The new frab has a bitter after taste and not as refershing a the old formula. Sorry Starbucks but you have a lost a customer. I always enjoy seeing my pals at 5 Points Starbucks and having my afternoon moca light frap with a cranberry/orange scone. I guess the benefit will be less time at the gym. 🙂
We had a customer come in last night and insist that WE had made her a Soy frap (a couple of other customizations as well to is)…We told her, no, that’s not possible since we don’t have all our products yet and all we’ve passed out are samples as we’ve been training. I almost got the idea that she was testing the waters to see IF we had the new product and were just using the old up first. It was really odd.

Guess it’s about high time I add my comments. I have heard no many negative things about the new Frappucinno’s I decidded to try one with my free drink coupon so I got a Venti dark cherry one with an extra shot of dark cherry and breve and I really liked it. Not a lot but I liked it and I like that there is no high fructose corn syrup which is bad for you. Next one I get, again, with a free drink coupon, will probabloy with two extra shots of dark cherry and less ice.
Ugh. Sorry, Starbucks, you have lost a loyal customer in me. Can’t stand the new fraps. I think in the spirit of honesty the company really should have taken frappuccinos OFF their menu, and called this new version something else. It is simply not the same drink, just like Coke and Tab are two different beverages.

The new frappuccinos are not some “secret thing” that we’re trying to do undetected. It’s what’s called a “soft launch” – wherein we’re allowed to start serving it before the “official” release date if we run out of the old frappuccino base (which is likely, since they’re discontinuing it). Next month, you’ll see signs for the new customizable frappuccinos all over the place.
Next time, have them make it with half-and-half instead of the regular milk. They’re 10 times better that way. Of course, they’re that much worse for you, but damn, do they taste good.
I’m seeing a LOT of buzz from Vegans on these, liking that they can drink them, liking their taste. Interesting! I hadn’t honestly thought of that aspect, more of allergies. But, there are a LOT of vegans out there.
I’m about to break up with a dear friend of 7 years. It was okay when she made me gain 15lbs on her daily sugar and fat laden treats. It was even okay when she took my money. But when she changed something that wasn’t even broke to begin with, she went too far! So, adios Starbucks! It’s been a wonderful friendship but I hate your new frappuccinos. The java chip was my daily guilty pleasure. Now what? Maybe you did me a favor- so you can have the pounds back and i’ll keep my money.
Had my first “new” coffee frap light today. Horrible, horrible, nasty aftertaste. Wish I had been told it was new before I reloaded my card. I think people will know the difference, I did the minute I saw it. I asked if it was coffee as it was very white. The barista said it was and I tasted it and it was disgusting, then I was told it was a new mix. How is this so customizable if they don’t even tell you there are options available when you order it. Although, all the options in the world won’t fix that horrible aftertaste. I wonder if they are using Stevia as sweetener, yuck. I had to drink an entire glass of orange juice to get the taste out of my mouth and throat.

After trying 6 different verisons of the new one, Im done. They all taste like butt.
The only one that tasted barely drinkable was one the barista completely tried his own method, no where near the called for new recipe…and many of the barista’s I talked
to in 5 different stores now also agreed… it isnt as good as the original…even if SB corp tells them to shutup and serve it. I talk to people and get them to open up….Very few customers, and even fewer employees I got to open up like it either. NIGHTMARE!
I’ll chime in with a little more support for the new stuff: the new light base is…well…tolerable. I couldn’t stand the old lite base, but the new stuff is OK.
I also like the new creme base. The old stuff was a bit too sweet and a bit too…I dunno…artificial in my tastes. The new stuff tastes more natural.
And I’m telling you all, try them with half-and-half. They’re far, far better. It cuts out that aftertaste and makes them taste richer and creamier. They’re not just better than the regular new frappuccinos, they’re better than the regular old frappuccinos.
Also, if you don’t like the new frappuccino base, try getting an iced latte version of your frappuccino (for instance, if you get the caramel frappuccino, get an iced caramel latte)…but make sure they make it with whole milk, and make it in the iced tea shaker and shake it up.
I really want to try a couple made breve…I’m afraid I”ll like them too much lol
@CaBarista – With Breve is amazing. I realize I’ve been overdosing on the new Frappuccino and need to cut back. Try the new creme base Frappuccino with the Orange Mango stuff. Wow! That is delicious!
@Enlightened Coffee Sage – A shaken iced caramel latte sounds very good, but most of these drinks are far too addictive! I find that I can slurp down an iced beverage embarrassingly fast. Where’s that Trenta when you need it? 😉
For what its worth, I tried the new Frappuccino today. I got a tall chai with non-fat milk (but the regular base). The barista did offer to tweak it if I didn’t like it and said he has been receiving mixed reviews so far. I get Frappuccinos so rarely that I figured I wouldn’t really remember what the old ones tasted like exactly.
It wasn’t bad, though I did notice an after taste that maybe wasn’t there before…but it could have been mental since I have read the complaints all over the place.
I will definitely try another with a coffee base to see, as it might have just been sweeter since it was chai.
I still can’t wait to see the new nutrition info – so I can see what it runs with non-fat milk but the regular sweet base.
The new formula is terrible; it has almost no coffee flavor and a really strange chemical taste. I don’t know why they had to change it – I really liked the old ones – but I’ve switched to the Dunkin Donuts Coolatas.

@Melody – Here’s a tip you may find useful: I use the smaller straws if I get a larger drink because the larger/longer straws are much wider and make you drink more than you would with a normal straw. Although they are shorter, the regular straws still fit in a venti cup and you don’t get the “firehose” effect.
(On a side note, If I remember my marketing correctly, I think the wider straws is actually an old McDonald’s trick that causes you to consume more. I was disappointed when Starbucks went the same route).
I think I tried the ‘new’ frappaccino today. I say think because I watched it being made and I swear real milk was used and some substances were put in the drink from small containers, but when I asked the barista if they were doing a soft launch, she denied it! Anyway, it was really good. I had read on this site about a dark cherry mocha vanilla bean frappaccino and that’s what I got. If it really was the ‘new’ frap, then I’m all for it. Fresher taste, better consistency. The ‘real’ launch is supposed to be this coming Monday, May 3rd. Can’t wait. Curious to see if my opinion remains the same.
