Today, (July 20, 2012) Starbucks opened their second Evolution Fresh concept store! It’s at 517 Pine Street, in downtown Seattle, and adjacent to a small Starbucks. The first Evolution Fresh store opened up on March 19, 2012, in Bellevue, Washington, inside the popular Bellevue Square shopping center. This new store in Seattle is only about 500 square feet, and is designed as a place to grab your food and then head back to your office (or head home if you live in downtown Seattle.)
The store feels a little bigger than its size due to its tall ceilings. The entire design is in very natural colors, and so the natural beautiful colors of juice and food don’t compete with a busy store design. The juice colors and tones are the “hero” of the store design. One store design element that I thought was really cool was this:
^That is a board where regular customers can write down their regular juice blend. It seems so interactive with customers to have an ever changing list of customer favorite juice/smoothie blends on a dry erase board. This wasn’t something done at the Bellevue Evolution Fresh store, so it’s a new touch.
The food area offers many of the same foods found at the Bellevue Evolution Fresh. However, the cold case has a lot more pre-made ready-to-eat food items. I am actually really impressed that they area able to offer so much food in such a tiny space! The protein add-in offerings for the salads have changed. Previously, at the Bellevue Evolution Fresh, a customer could add either chicken or steak to a salad. As I understand it, steak wasn’t nearly as popular of a seller as the chicken. Steak has been eliminated as an option: it’s chicken or tofu now.
Organic Apple Juice has been added as a fresh juice option from the juice dispensers. Apparently, in Bellevue parents requested Organic Apple Juice as an option for kids. My favorite juice might be the bottled Carrot Orange Mango. It’s hard to decide!
From what I hear, two more Evolution Fresh stores are planned for sometime this fall. I hear that one will be in San Francisco, and the other in Seattle again.
So if you plan to visit this store, here is the address again:
Evolution Fresh

Last but not least, for more Evolution Fresh articles, you can browse the Evolution Fresh category.
On July 19, 2012 I took the photos below at mini preview of the new store: I might go back and add a few more later too. The new store gets two thumbs up from me. And, I’m glad to have an Evolution Fresh close to home now. 🙂
Edit on July 20, 2012:
I went this morning to the store’s grand opening and took a few more photos – Here’s a few pictures from today, July 20, 2012:

I love the idea of the dry erase board where customers can write their juice preferences as it is always nice to see different combinations. I also like that they adapted the menu and saw that the steak was not popular and removed it. Ok, so again will ask when these stores are coming my way?
I fully plan on visiting the new store next week when I drag my husband downtown for some market shopping. Any favorite blends we should try? Maybe I’ll just pick something off the white board if it’s filled by then. 🙂
@MagicKat – I tried a juice blend today that I hadn’t had before and really liked it. I’ll go back on my way home from work, and get the name for you and more info.
@Purple1 – I’m sure an Evolution Fresh will get to your coast eventually! 🙂
@magickat There is a really great blend that is greens and apple juice. I keep forgetting what it is called.
To anyone : I just realized that Starbucks partners don’t get a partner discount at Evolution Fresh stores! Wow. It is a little on the expensive side of things.
Wow Melody that does not make sense to me that partners cannot get discounts. I assume if you are working at the Evolution Fresh stores, you can get a partner discount? But, you can use your EF card at a SB and get rewards? Very odd!
Thanks Melody! I love apples, so that sounds great to me. I wonder if I can still pay with my partner card there, I guess I’ll find out. That’s bizarre that partners don’t get a discount, but maybe that’s something they’ll implement down the line. I’ll still go there regardless, I’m pretty excited to see the new store.
