The Olive Way Starbucks in Seattle held a dynamic coffee tasting this evening: It was another world-class event. The three coffees featured at this event were Starbucks Ethiopia Harrar, Aged Sumatra Lot 593, and Guatemala Antigua Santa Catalina. The food pairings included the Starbucks “elevated food menu” offerings of New York Cheesecake, Brown Butter Apple Tart, and Artisan Focaccia. The additional dessert and food offerings used at this event are exclusive to the Starbucks “beer and wine” stores. So allow me to back up just a moment. The food at today’s event included the raisins that are normally provided with the Starbucks oatmeal; the New York Cheesecake; the artisan focaccia bread with olive oil; and the Starbucks Brown Butter Apple Tart.

As I already mentioned, Anton’s coffee tasting was absolutely wonderful. One thing that I didn’t know that I learned this evening is that the Reserve coffee packaging is hand assembled. In other words, all the stickers on the exterior are placed on the packaging by hand, and not by a machine. Here’s the coffee tasting getting started, and a few additional photos of the tasting underway:
** Guatemala Antigua Santa Catalina**
The first coffee that we tried was the Guatemala Antigua Santa Catalina. It is wash-processed, and a medium roast and body coffee. The aroma definitely did have a lot of the characteristic praline and bittersweet chocolates. This coffee had a wonderful round body, was smooth, and finished off the palate quickly. This was a delicious coffee. I definitely liked it. Seems like it would be perfect breakfast time coffee. We paired this with the Brown Butter Apple Tart. The pairing was delicious, though it really made me hungry for more apple tart. Here’s what our plate of food pairing samples looked like:
Here’s the focaccia bread, which was intended to pair with the Aged Sumatra, though I was so enjoying all the other pairings, that I didn’t do that one:
When the coffee tasting event was over, I bought an Brown Butter Apple Tart because it was so good. Here’s what that looks like if you order it for here (I threw in a photo of the store’s unique pastry case display too):
This pairing was delicious, and it seemed like everyone in the group (about 8 people attended this coffee tasting) enjoyed the Guatemala coffee.
** Sun-Dried Ethiopia Harrar**
The Sun-Dried Ethiopia Harrar has a tremendous blueberry aroma. Anton (the coffeemaster conducting this tasting) passed around the bag of beans so we all could get a big sniff of the aroma, and then he grabbed the store’s aroma kit to help everyone really decipher and learn about the aroma of the Sun Dried Ethiopia Harrar. The Harrar is a natural-natural processed coffee, which means that the farmers lay the coffee cherries out on tarps to dry in the sunshine. This results in the coffee bean taking on many of the berry characteristics of the cherry. In contrast, in the “wash-processed” method of processing coffee, the coffee cherries are placed into very large vats of water which is used to wash the cherry off of the bean. This “sun-dried” or “natural” method of processing coffee is the most difficult and temperamental: The cherries may easily turn rancid in the sunshine, and/or even a spike in humidity or a dramatic change in weather may disrupt the delicate process, and cause the coffee cherries to spoil.
The Sun-Dried Harrar was paired with the raisins used in Starbucks Perfect Oatmeal. This was an incredible pairing. I would never have thought that something so simple could make a coffee alive, but the raisins are extremely sweet, and the sugary flavors make the berry notes of the coffee just pop. This is a must-try food pairing. I loved the Harrar.
** Aged Sumatra Lot 593**
The last pairing was the cheesecake with Aged Sumatra. First off, we all smelled the Sumatra, and most everyone could smell a good deal of earthy and spices notes. Sumatra coffee is processed with a semi-washed processing method, and then it is aged in warehouses in Singapore for three to five years to create the distinctive flavors of an aged coffee.

That previous Sumatra is fairly long, and dense but I think it is worth it to read through. I included one photo of Starbucks unroasted green (unaged) Sumatra beans side by side with unroasted aged Sumatra coffee beans.
One person in our coffee tasting group strongly picked up on the flavors roasted sesame seeds in this coffee. I thought that was a great description, and I can imagine that the savory flavors of roasted nuts or seeds would also pair well with this coffee. The Sumatra coffee was quite popular, but a few people in the group thought it was too bold for their preferences.
This coffee has a very big mouth feel that lingers for a long time on the palate. The rich and thick texture of the cheesecake went perfectly with the lingering flavor of the Aged Sumatra. I had thought that perhaps the cheesecake would be too sweet for the Aged Sumatra but that definitely was not the case. They both had so much texture to them that neither one overpowered the other in the mouth. It’s difficult to describe. So I just have to say that you should try this!

Melody, your coffee tasting posts are absolutely one of my favorite topics you post on!! I love hearing the combinations and hearing about the Reserve coffees that I don’t get to try.
These combinations sound great! The brown butter apple tart sounds amazing! Guatemala Antigua Santa Catalina definitely sounds like a coffee I need to try to find!
I’m still hoping I can find Hawaii Ka’u on eBay somewhere!! I loved your tasting post on that one too. But then often when I say that, a new Reserve is introduced like Guatemala Antigua Santa Catalina and I say ‘Ooh! I need to try that one!!’
@Hayley – This was an amazing coffee tasting. I couldn’t think of a good title that somehow would convey 3 coffees, and 3 desserts, all unique to the Olive Way Starbucks. I think the Ka’u sold out fast. I haven’t seen any left over downtown.
Melody what a great coffee tasting. I never see anything like that around here and it is a shame the regular SB stores cannot do this. Plus the pastries for only these stores sound so yummy. Sun-Dried Ethiopian Harrar – I give it five stars. There is a lot of different things going on in the flavor of that coffee. It definitely gave me faith Melody.
Guatemala Antigua Santa Catalina – I give it 3 stars, but I happened to get sick before trying it, so the taste buds may have not been fair to this coffee. That is why I put off trying the Sumatra. Coffee just hasn’t tasted too well the past 4-5 days.

I wonder where Denise is? She likes the Yirgacheffe, and the Harrar has a lot of the same flavor notes. I wonder if she has tried it.
@purple1 – The beer and wine Clover Starbucks have also been known to do wine tastings, but I’ve never joined in on that. I haven’t seen a tea tasting, but I will keep on the lookout for that.

Are all of the stores supposed to have an aroma kit? I would love to be able to use that when tasting coffees. I can pick out some notes, but an aroma kit would be wonderful to help pick out some of the subtler notes of the coffees.
@Anthony – I don’t want others to feel left out. All I can say is to tell your local store you’re interested. I think from the perspective of the partners, it can be hard to get customers involved and interested. In Seattle, Olive Way is one of the only stores with regular coffee events – you need to come visit! 🙂
@Merryn and Suzanne – @Suzanne – I know, what amazing treats this store has!
From what I hear, Starbucks created aroma kits because too many partners, when asked what does their coffee smell or taste like, would say, “coffee.” They found that having the comparison bottles helped partners understand the geography nuances of the coffee. I doubt they still make the aroma kits. My understanding is that about five or six years ago (maybe even 7 years ago), every store got one. I do know that many stores hung on to that aroma kit! Probably those stores that are brand new wouldn’t have one at all, and there are probably lots of newer partners that haven’t heard of it.

where I have been? mostly in Best Buy. first my barely one yr old HP pc became ‘wrong’….something in the screen, sguiggly things…..just like when I lost the LED board in my barely 2 yrs old Vaio a yr ago. so, it’s gone for a while….luckily there’s another one (computer) in the house to use. (AND, VERY LUCKILY, I HAD bought the 2yr warranty)
THEN, the next day, as I was walking toward a bldg to meet a friend, one of the 2 peppermint mochas I was carrying, fell out of the tray, onto the ground!!! AND, unknown to me until about an hr later, apparently also into the outside pocket of my purse, where my PHONE WAS!!!! all filled with peppermint mocha. :(((((((( so, new phone> not NOT so easy to use and not enough help at Best Buy…..may still take it back and exchange. (30 days) so, those kind of things.
hey! @chgo: have you seen the remodel of our original (’96) Mt P. store on NW Hwy??? just west of rt83? still small but BEAUTIFUL!!!!! (no Clover, no Reserve tho….but what a beautiful job) not done yet I think when you were here Melody.

@Denise – I would love to see your remodeled local store! Happy Thanksgiving to you! I’ve always heard that if a phone becomes wet, the best thing to do is put it in a bowl of uncooked rice – Somehow the rice absorbs the liquid – But I dont know if that works with Peppermint Mocha. LOL That’s quite a run of bad luck. As to the Harrar, I’ve seen tweets from some areas where there are so few Clover stores and Reserve stores that it is already sold out, but still plenty of it here. I am totally enjoying all these Clover options now. The Clover stores are like the Starbucks of yester-year, to some degree, at least in that they have so much coffee passion. I would love to experience Intelligentsia like in Karl Dahlquist’s comment, but I doubt we will ever get one in Seattle.

I knew that about the rice and the phones, actually did that once a while back but that was from my phone becoming drenched with sweat from talking on it while on the ellipitical for about an hr!!! plus I was home so I was NEAR rice…it did actually work because my phone was OUT. this peppermint mocha scene… mostly was in the hard case of the phone cover, which I managed to get off (plus, we’re talking sticky now!!!), I was in a car…could not even get to to the battery (plus, no rice:)….by the time I got to the store, phone still worked but barely could hear…when opened the battery was ok, etc. apparently the speaker was shot, or nearly.
long longer, I now have this new one I can barely use so I think it’s going back maybe Monday.
anyway, sorry so off-topic altho actually, alot of this DOES involve a Sbux drink!!! (I actually think it fell from the tray to the ground because of the way the tray was defective……:( upon review!
