Starbucks has launched the Ristretto Bianco beverage in much of Europe, some Asian countries, and in a few other countries. One of my twitter followers mentioned that this beverage was just launched on October 1st, in South Korea. From what I’ve heard via Twitter, this beverage is not available in Germany, but is definitely available in Hungary, Poland, Austria, and South Korea.
In September this year, a partner (meaning a Starbucks employee) sent me photos of his Ristretto Bianco, launched in Wroclaw, Poland. He was very excited about the introduction of his new drink! Recently, I received an email from a partner in Vienna, who was also excited to talk about this same espresso beverage. He sent photos of his store and its food and pastry case, and I realized I had to write about this.
I will note that the United Kingdom and Ireland do not offer the Ristretto Bianco because they offer the “flat white” which is also a small traditional latte (as I understand it, a flat white is closer to a wet cappuccino.).
As to the Ristretto Bianco, as I understand it, it is a smaller-sized latte using Ristretto espresso shots (shorter shots), and with decorative latte art atop it. The Ristretto Bianco has been tested in the United States, where Starbucks seemingly has vetoed its introduction for this country. It seems as though American customers want larger size lattes, to-go ware, no latte art, and don’t know what a Ristretto shot it (or, are not intrigued by it). (I’m not saying that’s wrong or right, it just seems as Americans and Europeans want two different things in their coffeehouses.)

In Starbucks in Austria (and I assume in other places also), the store manager has to certify the baristas as qualifying to make a Ristretto Bianco. Each barista must be able to produce three successive perfect beverages, all with a perfect finish before certifying:

I want to digress and mention the pastry case in Starbucks Austria. I love these two photos:
The photo that includes the fresh fruit on the top shelf has interesting signage with it. The words right below the fresh salad and sandwiches say, “Ihr köstlicher Lunch – auch zum Mitnehmen!” That says, “Your delicious lunch – also to-go!” Given that they market that the sandwiches are available to-go, it seems to suggest that most people stay in the Starbucks to eat a sandwich. Below that shelf, the signs seems to also say that this Starbucks can warm up your sandwich, though the sign is partially covered by the sandwiches, so I’m not totally sure what it says.

One more thing, the signage in the store, as well as on the Starbucks.at website says, “Wir erfüllen einen neuen Standard der Perfektion. Deinen.” That translates as “We are reaching a new standard of perfection. Yours.”
I like it. A very traditional espresso beverage is not larger than eight to twelve ounces. Who knows. Maybe as Americans start drinking lattes from a Verismo, they’ll start to like smaller lattes.
Would you order a Ristretto Bianco – unmodified – from your local Starbucks? It’s no longer a Ristretto Bianco if you add five syrups and whipcream on top and put it in a 16-ounce to-go paper cup. What do you think?
Last but not least, the partner from Austria mentioned that the Ristretto Bianco is so popular in Europe that even Burger King stores in Austria now offer their own variation on the Ristretto Bianco. I somehow cringe at the thought of a Ristretto Bianco from a Burger King.

I loved the Ristretto Bianco when I could get them in KY and was sad to see them go. While I do often get a flavored latte, I also enjoy the more traditional beverages as well. Too bad we don’t get the option of the traditional drinks, and can only get the sugared up Americanized versions.
Love the pastry case and the inviting nature of the items. I enjoy seeing the choices that SB stores offer to customers on the international arena.
Last time I was in the UK, I took to drinking a lot of Costa Coffee, which I loved. When you stayed in they would give you a nice big latte, similar to the Ristretto Bianca. It was actually pretty calming to have a nice stay-in drink and a little sandwich and I would love something similar to that to make its way back to the States. I can’t wait to get back to UK so that I can try this out!
@Ethan – I love your hashtags. @MerrynCole – I had totally forgot that areas of Kentucky were also a test market for the Ristretto Bianco. Sugary giant beverages – that seems to be the American style. It reminds me of a conversation I had with CD ages ago about the “Bubba cup” Ugh.
I would probably only order it on weekends when I had time to sit in the store and relax, or on vacations, normal weekday mornings would be personal cup to go still

Starbucks Netherlands has Flat White, not Ristretto Bianco. Our Flat Whites are served in a short size mug and have 2 regular shots of espresso. This is topped with whole milk, like a latte and has to have a latte art finish.

At the experimental Portland (Starbucks Evening at 11th and Couch) store where they have different coffees each month in one of their espresso hoppers I had a short Guatemala Antigua Ristretto latte. I guess I should have ordered it in a for here cup to be hip. It was a very clean, elegant, and enjoyable drink. The Ristretto Bianco might make it here yet. Admittedly I did feel bad knowing I could have gotten four more ounces of nonfat milk for a dime. ($2.55 vs $2.65)
Kurt, all I can day is wow. I need to head down to that store. Is that the famous Brewery Blocks? I’m on my phone. Sorry so sloppy. I recall hearing that there in one Simonelli espresso machine at a Starbucks and had no idea where, but the location you mention sounds like it. Can you email me a pic? Here in New Zealand, we have the flat white which in my experience as a (non-Starbucks) barista is the most commonly ordered coffee as well as the ristretto blanco. I haven’t tried it yet, as although I like a strong coffee, I prefer a larger size. Most people I know consider Starbucks’ standard recipes too weak. Here, most coffee shops serve doubles for 6-10oz drinks, whereas at Starbucks I always ask for an extra shot as a tall is only a single shot.
No at Starbucks New Zealand, a tall latte and cappuccino have 2 shots of espresso. While a flat white the same size consists of 3 shots of espresso. The ristretto bianco construction format for nz does not require latte art. The texture and foam should be like a flat white and the only latte art would be a white small dot not larger than 1/3 of the diameter of the cup.
Just order a quad short latte poured like a cappuccino for here. Tell the Batista to pour the milk in one spot on far side of cup fro. Him until he see’s the milk start to thicken, he should then pull the pitcher towards him while wiggling his wrist evenly left and right, once at their side of cup said barista should go down middle of wiggle pattern dragging all the foam that’s on top in to a shape resembling some sort of crude flower. “A Rosetta”
I make pics in people’s drinks all day here. It’s up to each individual barista to spread coffee knowledge, joy and culture to the masses. Then someday we’ll have a ristretto bianco, or whatever you want to call it in its many incarnations, Herr in the US.

The coffee master at our store (Bangor, ME) saw a post about this drink on your site a few weeks back and made one for all the partners working that day. I have been having one every morning since! I am in love with this drink, it is amazing. We also have two regulars who are now ordering these when either the coffee master or I are on the bar. I wish Starbucks would release this drink officially in the US. It takes a bit of work to make this drink right, and it is super easy to mess up, but when done right it is heaven in a cup.
I want this at least in the Seattle area, like the stores that have evening beer and wine.
The more I look at the lattle art, the more I wish partners would do it here.

Yes, sometimes it is hard to distinguish the drinks in the queue as coming from Starbucks or Baskin-Robbins….I bet the calories are equivalent. More Caramel please!
Both my mainstay (well, likely until TOMORROW 🙁 have 4shots of ristretto in a tall, and in the case of the doubleshot, which defaults to a grande, also 4. They know that’s what I want, don’t ask, and just press the little button. (really miss hand-pulled shots from way back)

This is my kind of drink. I do wish they’d roll this out in the US – perhaps even as someone suggested, to the “evenings” stores.
@denise – Tomorrow is an interesting day for Starbucks. I wonder how many people will actually change their behavior because of the change in the Rewards program? (that might be a good “open thread” question Melody). I know I’ve changed my behavior over the past month. Instead of ordering my regular drink, I’ve been stocking up on whole bean and taking the free drink. So while I’ve spent more over the past month, my total Starbucks spend will be significantly less moving forward. I also intentionally did not go to Starbucks yesterday or today because I am on the cusp of 15 stars and didn’t want to get an old reward at a greater expense than the new one.

@CD: I have definitely changed my habits at Sbux. I will NOT be buying my usual winter drink, paying .70cents for the cinn dolce syrup etc. I will buy the tarts daily….in the hopes they do not REMOVE them again. I had my last free tall with a bag of beans, too….on the 15th. and have a few lbs waiting, sealed best I can. But will I buy my beans at Sbux anymore? no. I’ll get whole beans at Sunset foods or somewhere, and also switch to Intelligentsia at least every other buy. I don’t expect Sbux to miss me. and I don’t care, of course. Ic an’t imagine what it would take for Sbux to miss any of its LONG time brand LOYAL customers….for every one of us, there’s a McD’s or Dunin’ customer walking in to buy their PPR or BLONDE 🙁 I feel their “3rd place” emphasis has gone in most places, and especially when I see how little many of the partners are informed, or can even figure out how to USE our “rewards” (IF we know we have them on there)

just as an aside to this: I was told by a higher than sm manager: many of the sandwiches will soon be disappearing all together. period. funny how that coincides with the ability to use “food” as a reward redeemed.
I agree with a lot of the points Denise R makes… This weekend I received a post-card from Peet’s, talking about the “first roast” of their 2012 Holiday Blend today, and an offer to order some with free shipping. I was thinking about how it was that a Peet’s offer arrived in my mailbox, and not an offer from Starbucks who I bought at least 100 lbs of whole bean for the office last year. Plus Peet’s (and other smaller roasters like Caffe Vita) ships on the day it was roasted…so it is noticeably fresher when it arrives.
I could probably write a chapter on what I see different, but that is the topic for another thread!
Hey! I’m from Hungary, and I’ve became a rosetta maestro in my store. I love this drink, but I try to practice ther rosetta on latte too 🙂
Singapore stores carries it too! It’s fabulous. But my barista didn’t complete it with art on top.. disappointed.
@sam we rarely do latte art as we are not trained to do so during official training. I do know some baristas have picked up doing latt art themselves.
Oddly enough the Singapore stores serve both ristretto bianco and flat whites… are ristrettos still less common overseas?

oh i see. Yup, ristrettos are not common here. Not even in artisanal coffee cafes. They lean more towards lattes and espressos..

I have had 2 Ristretto Biancos this week in Vienna, Austria and love the taste of them. They are about 250 ml and have a lot less milk in them and so that you can actually taste the coffee! People over here are less “to-go” than Americans – they like to take a break and enjoy their coffee while it’s hot.
FYI. The Ristretto Bianco is still available in Hong Kong and China. Got one while on a trip.
